How To Make Chaat Papri

Recipe 1

  • Besan – 2 cups
  • Fenugreek leaves (chopped) – 6
  • Salt – 1 tsp
  • Red chili powder – ½ tsp
  • Mustard oil – 500 ml
  • Cream of tartar – a pinch
  • Asafetida powder – a pinch
  • Water - 3/4 cup
Method Of Preparation
  • In a bowl, mix besan, asafetida, red chili powder, salt and cream of tartar.
  • Now, add chopped fenugreek leaves into the mixture.
  • Add water into the mixture and mix well using your fingers to form a firm dough.
  • Mix the dough with 2 tbsp of mustard oil.
  • Knead the stiff dough using your palm, or else pound it with a grinding stone.
  • Make small balls using the dough.
  • Flatten these to form rotis of 5 to 6 inches in diameter.
  • In a frying pan, add mustard oil and heat it in high flame.
  • Once heated, reduce the flame and fry papris till it becomes golden and crisp.
  • Leave the papries to cool down.
  • Store the papries in an airtight container.

  • Flour – 2 ½ cups
  • Maida – 3 cups
  • Grated coconut – 1 cup
  • Dates – 6
  • Curd – 5 cups
  • Potatoes (boiled) – 4
  • Coriander leaves – 1 bunch
  • Red chili powder – 4 tsp
  • Cumin seed powder – 2 tsp
  • Ajwain powder – 2 tsp
  • Turmeric powder – 1 tsp
  • Tamarind – 2 tbsp
  • Chaat powder – 1 tsp
  • Mustard seeds
  • Cumin seeds
  • Curry leaves – a few
  • Salt to taste
  • Oil
Method Of Preparation
  • Take a large bowl and add flour, maida, salt, cumin seed powder, red chili powder, ajwain powder and turmeric powder.
  • Mix the powders well and add water to make a dough.
  • Roll out balls from this dough and flatten them into small rotis.
  • In a frying pan, add oil and heat the pan.
  • Deep fry all the rotis and keep them aside. Make sure to drain off all the excess oil.
  • Roast cumin seeds, mustard seeds and curry leaves in oil. Mix this with curd in a bowl.
  • Boil dates and tamarind and leave it to cool down. Once cool, blend the contents along with some water, in a blender to make a fine paste. Add red chili powder and salt. This will form the red chutney.
  • Next, smash the boiled potatoes and add chaat powder.
  • In a plate, crush the papris and add the smashed potatoes. Over this mixture, add curd mix and red chutney and serve.
