How To Make Chaat Papri

- Besan – 2 cups
- Fenugreek leaves (chopped) – 6
- Salt – 1 tsp
- Red chili powder – ½ tsp
- Mustard oil – 500 ml
- Cream of tartar – a pinch
- Asafetida powder – a pinch
- Water - 3/4 cup
Method Of Preparation
- In a bowl, mix besan, asafetida, red chili powder, salt and cream of tartar.
- Now, add chopped fenugreek leaves into the mixture.
- Add water into the mixture and mix well using your fingers to form a firm dough.
- Mix the dough with 2 tbsp of mustard oil.
- Knead the stiff dough using your palm, or else pound it with a grinding stone.
- Make small balls using the dough.
- Flatten these to form rotis of 5 to 6 inches in diameter.
- In a frying pan, add mustard oil and heat it in high flame.
- Once heated, reduce the flame and fry papris till it becomes golden and crisp.
- Leave the papries to cool down.
- Store the papries in an airtight container.

- Maida – 3 cups
- Grated coconut – 1 cup
- Dates – 6
- Curd – 5 cups
- Potatoes (boiled) – 4
- Coriander leaves – 1 bunch
- Red chili powder – 4 tsp
- Cumin seed powder – 2 tsp
- Ajwain powder – 2 tsp
- Turmeric powder – 1 tsp
- Tamarind – 2 tbsp
- Chaat powder – 1 tsp
- Mustard seeds
- Cumin seeds
- Curry leaves – a few
- Salt to taste
Method Of Preparation
- Take a large bowl and add flour, maida, salt, cumin seed powder, red chili powder, ajwain powder and turmeric powder.
- Mix the powders well and add water to make a dough.
- Roll out balls from this dough and flatten them into small rotis.
- In a frying pan, add oil and heat the pan.
- Deep fry all the rotis and keep them aside. Make sure to drain off all the excess oil.
- Roast cumin seeds, mustard seeds and curry leaves in oil. Mix this with curd in a bowl.
- Boil dates and tamarind and leave it to cool down. Once cool, blend the contents along with some water, in a blender to make a fine paste. Add red chili powder and salt. This will form the red chutney.
- Next, smash the boiled potatoes and add chaat powder.
- In a plate, crush the papris and add the smashed potatoes. Over this mixture, add curd mix and red chutney and serve.
