Shami Kebab
Shami Kebabs are known for their taste titillating flavor and heavenly aroma. These scrumptious kebabs are quite famous festive evening snacks during various Muslim festivals, celebrated not just across India but in other countries of the sub-continent, like Pakistan and Bangladesh as well. It is believed that this mouthwatering dish, often also known as Shami Kabab, was first prepared in the elaborate kitchens of the Mughal Emperors and from there, it found its way to the hearts of the public at large. During the festival of Bakri-Id, Shami Kabeb remains one of the most savored dishes. This article sheds light on simple steps to make this wonderful Mughlai dish.
Ingredients:
- 1 kg Mutton bone lees (cut into small pieces)
- 1 cup Yellow lentil (chaana daal)
- 2 Onions (chopped)
- 13 Red chili pods
- 3 Black Cardamoms
- 6 Black Pepper
- 1/2 tsp Cumin
- 6 pods Garlic
- 1 small Ginger piece (sliced)
- 1 cm Cinnamon stick
- Salt to taste
- 1 cup Oil
- 1 cup fresh Coriander (chopped)
- 4 Green chilies (chopped)
Preparation:
- Firstly, boil yellow lentil (Channa daal) along with the meat in a pan.
- Then put cardamom, cumin, garlic pods, ginger, salt, cumin, red chili pods, black pepper, cinnamon in the heated pan and mix them together, then add 4 cups of water to the ingredients.
- Keep cooking the mixture, until the yellow lentil becomes entirely mashed and the meat also turns chewy.
- Now cook this concoction on a high flame and make sure that liquid material in the pan dry’s off.
- Once this done, let the meat rest, once cooled put it in a food processor, and grind until it becomes smooth.
- Now add freshly chopped coriander, green chilies, chopped onions and beaten egg to the ground meat and mix them thoroughly.
- Next, take the dough and make small lemon size balls out of it and press them with the palm of your hand to make them flat.
- Take a frying pan and heat in it, a generous amount of oil, dip the kebab in the beaten egg and fry until it becomes pinkish in color.
- Once pink, take them out and serve with hot.
